Menu (ingredients are for 2 people)

IMPEPATA DI COZZE (Mussels in a Pepper Broth)
Ingredients for 2 people:
1 cups dry white wine
2 garlic cloves crushed
2 dozen fresh Mussels
scrubbed, bearded and rinsed 1/4 cup Italian Parsley
minced fennel seeds
extra virgin olive oil
salt and pepper


LINGUINE ALLE VONGOLE (Clams linguine)
Ingredients for 2 people:
2 tablespoons kosher or coarse sea salt
1/2 pound to 3/4 of linguine
extra virgin olive oil
1 garlic clove
about 24-30 clams, scrubbed, (vongole veraci, manila or little neck clams)
chopped italian parsley
1 cup dry white wine
optional: pepper and red pepper flakes


SALMONE ALLA SICILIANA, AL CARTOCCIO
(Wild Salmon, Sicilian Style, paper parchment oven cooked)

Ingredients for 2 people:
16 to 20oz wild Salmon or wild white fiish fillets (or best fresh fish you can find)
extra virgin olive oil
2 garlic cloves
about 10 pieces cherry tomatoes cut into half
8-10 mediterranean black olives
1 cup of fish stock or veggie stock
8-10 capers
white wine
Italian parsley
salt & pepper
